Riviera Red Enchilada Sauce

Serves 4

8-10 tortillas

1 jar of Riviera Red Enchilada Sauce

1½ cups of grated cheddar cheese

1 small grated onion {optional}

Heat enchilada sauce over low heat. Soften tortillas in microwave, hot oil or in heated sauce. Place 2-4 Tbs. sauce in bottom of a 9x12 baking dish. Fill tortillas with shredded cheddar cheese, and onions if desired, roll and place in baking dish seam side down. Pour remaining sauce over rolled tortillas and sprinkle left over cheese over top. Bake in 350 oven for approximately 20 minutes. Serve with refried beans, rice and shredded lettuce on the side. RIVEIRA GREEN ENCHILADA SAUCE may be substituted for RIVIERA RED ENCHILADA SAUCE.
